  • 1 pound lean ground turkey
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 2 large carrot, diced
  • 2 medium celery stalks, diced
  • 1 cup frozen peas
  • 1 cup low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme leaves (or 1 tsp dried thyme)
  • 3 large sweet potatoes, peeled and cubed
  • 0.25 cup unsweetened almond milk
  • 2 tablespoons ghee or coconut oil
  • 1 teaspoon sea salt
  • 0.5 teaspoon ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of water to a boil. Add the cubed sweet potatoes and boil for 15 minutes, or until soft. Drain and set aside.

While the sweet potatoes are cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up with a wooden spoon. Remove from the skillet and set aside.

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the diced onion, minced garlic, diced carrots, and diced celery. Sauté for 5-7 minutes, or until the vegetables begin to soften.

Transfer the turkey and vegetable mixture to a 9x13-inch baking dish, spreading it out evenly.

Spoon the mashed sweet potatoes on top of the turkey and vegetable mixture, spreading it out to cover completely.

Bake in the preheated oven for 25 minutes, or until the top is slightly golden.
