Ingredients

  • 6 cups Baby spinach
  • 2 pieces Boneless, skinless chicken breast
  • 2 tablespoons Sesame seeds
  • 2 tablespoons Olive oil
  • 2 tablespoons Soy sauce (low sodium)
  • 1.5 tablespoons Rice vinegar
  • 1 teaspoon Honey or maple syrup
  • 1 teaspoon Sesame oil
  • 1 piece Garlic clove, minced
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat a grill pan or outdoor grill over medium-high heat and lightly oil the surface.

Step 2

Slice each chicken breast horizontally into two thin fillets for even cooking.

Step 3

Season the chicken fillets with a pinch of salt and black pepper on both sides.
