Ingredients

  • 200 grams Whole wheat flour
  • 1 teaspoon Sea salt
  • 4 tablespoons Olive oil
  • 120 milliliters Water
  • 3 medium Yellow onions
  • 100 grams Fresh spinach
  • 6 pieces Anchovy fillets (optional)
  • 2 teaspoons Fresh thyme leaves
  • 1 clove Fresh garlic, minced
  • 10 pieces Black olives, pitted and halved
  • 0.5 teaspoon Ground black pepper
  • 1 tablespoon Nutritional yeast (optional, for added flavor)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the whole wheat flour and sea salt. Gradually stir in 2 tablespoons of olive oil and water. Mix until a dough forms, then knead on a floured surface for 5 minutes until smooth. Cover with a damp towel and let rest while you prepare the toppings.

Step 3

Thinly slice the onions. Heat 2 tablespoons of olive oil in a skillet over medium heat, then add the onions. Sauté gently for 15-20 minutes, stirring occasionally, until caramelized and golden brown. Add the minced garlic and thyme in the last 2 minutes of cooking. Remove from heat.

Step 4

In the same skillet, add the spinach and cook for 2-3 minutes until just wilted. Season with a pinch of sea salt and black pepper. Set aside to cool slightly.

Step 5

Roll out the dough on a floured surface to a rough rectangle (about 1/2 cm thick) and transfer it to the prepared baking sheet.

Step 6

Spread the caramelized onions evenly across the surface of the dough, followed by the wilted spinach. If using anchovies, arrange them decoratively across the top, along with the black olive halves.

Step 7

Sprinkle the top with an optional tablespoon of nutritional yeast for a savory, cheesy flavor. Add a final sprinkle of black pepper.

Step 8

Bake in the preheated oven for 18-20 minutes, or until the crust is golden and crisp. Remove from the oven and let cool slightly before slicing.

Step 9

Serve warm or at room temperature. This pissaladière pairs wonderfully with a crisp green salad or a light soup for a clean and balanced meal.
