Grate the courgettes (zucchini) using the coarse side of a grater. Place them in a colander, sprinkle with 1 teaspoon of salt, and let them sit for 10 minutes to draw out excess water.
After 10 minutes, use your hands or a clean kitchen towel to squeeze out as much liquid as possible from the grated courgettes. Transfer them to a large mixing bowl.
Add the flour, egg, crumbled feta cheese, chopped parsley, chopped mint, spring onion, and ground black pepper to the bowl with the courgettes. Mix well to combine into a thick batter.
Heat 2 tablespoons of olive oil in a large frying pan over medium heat.
Scoop about 1 heaping tablespoon of the courgette mixture and drop it into the pan, flattening slightly with the back of the spoon to form a fritter. Repeat to make multiple fritters, being careful not to overcrowd the pan.
Cook the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
Remove the cooked fritters from the pan and place them on a plate lined with paper towels to drain excess oil. Repeat with the remaining courgette mixture, adding more olive oil to the pan as needed.
