Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 0.5 cups all-purpose flour
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 8 ounces cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 0.75 cups dry Marsala wine
  • 0.5 cups chicken broth
  • 0.25 cups heavy cream
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound them to an even thickness, about 1/2 inch thick.

Step 2

Mix the flour, salt, and black pepper in a shallow dish. Dredge the chicken in the flour mixture, shaking off any excess.

Step 3

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat until hot but not smoking.

Step 4

Add the chicken breasts to the skillet in a single layer and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

Step 5

Reduce the heat to medium, add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil to the skillet, and let the butter melt.

Step 6

Add the sliced mushrooms and sauté for about 5 minutes until browned and tender. Stir in the minced garlic and cook for 1 more minute until fragrant.

Step 7

Pour in the Marsala wine and let it simmer for 2-3 minutes, scraping up any browned bits from the bottom of the skillet with a wooden spoon.

Step 8

Add the chicken broth and bring the mixture to a simmer. Let it cook for another 3-4 minutes until slightly reduced.

Step 9

Stir in the heavy cream and simmer for 2-3 minutes, allowing the sauce to thicken slightly.

Step 10

Return the chicken breasts to the skillet, nestling them into the sauce. Spoon some sauce over the chicken and let it warm through for 2 minutes.

Step 11

Garnish with fresh parsley and serve immediately. Chicken Marsala pairs beautifully with mashed potatoes, pasta, or steamed vegetables.
