Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Add the spinach leaves to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
In a mixing bowl, combine the cooked spinach, crumbled feta cheese, and softened cream cheese. Stir until well mixed. Season lightly with salt and black pepper.
Lay one sheet of phyllo dough on a clean surface. Brush it lightly with melted butter. Place another sheet of phyllo dough on top, brushing again with butter. Repeat until you have four layers.
Cut the layered phyllo dough stack into four equal squares.
Place a heaping spoonful of the spinach filling in the center of each square. Fold the edges of the phyllo dough over the filling to form a bundle, pinching or twisting at the top to seal.
Repeat the process with the remaining phyllo dough and filling to create eight bundles in total.
Place the bundles on the lined baking tray and brush the tops lightly with melted butter. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
While the bundles are baking, prepare the pistachio dressing. In a food processor, combine the pistachios, Greek yogurt, honey, lemon juice, 1 tablespoon of olive oil, remaining salt, and black pepper. Blend until smooth. Adjust seasoning to taste.
Once the spinach bundles are done baking, remove them from the oven and allow them to cool slightly.
Serve the warm spinach bundles with the pistachio dressing on the side for dipping or drizzling.
