Ingredients

  • 6 cups Green cabbage
  • 2 medium Carrots
  • 0.5 medium Red onion
  • 0.5 cup Apple cider vinegar
  • 0.25 cup Granulated sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Celery seed
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Olive oil

Directions

Step 1

Thinly slice 6 cups of green cabbage using a sharp knife or mandoline, and place it in a large mixing bowl.

Step 2

Peel and grate the 2 medium carrots. Add the grated carrots to the bowl with the cabbage.

Step 3

Thinly slice half a medium red onion and add to the cabbage and carrots in the bowl.

In a separate small bowl, combine 0.5 cup of apple cider vinegar, 0.25 cup of granulated sugar, 1 tablespoon of Dijon mustard, and 1 teaspoon of celery seed.

Mix the vinegar, sugar, mustard, and celery seed until the sugar is dissolved.
