Ingredients

  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 0.5 cup Granulated sugar
  • 1 whole Vanilla bean
  • 2.5 teaspoons Unflavored gelatin
  • 3 tablespoons Cold water
  • 0.25 teaspoon Salt

Directions

Step 1

In a small bowl, sprinkle the unflavored gelatin evenly over 3 tablespoons of cold water. Let it stand for about 5 minutes until it softens.

Meanwhile, pour the heavy cream and whole milk into a medium saucepan.

Split the vanilla bean lengthwise with a sharp knife and scrape the seeds into the cream mixture. Add the vanilla pod into the saucepan as well.

Over medium heat, add the granulated sugar and salt to the cream mixture, stirring occasionally until the sugar dissolves and the mixture begins to steam. Do not let it boil.

Remove the saucepan from heat and discard the vanilla bean pod.

Stir in the softened gelatin into the hot cream mixture, whisking until the gelatin is completely dissolved.
