Ingredients

  • 2 cups whole milk
  • 1 vanilla bean
  • 3 large eggs
  • 0.5 cup granulated sugar
  • 1 tablespoon cornstarch
  • 0.25 teaspoon salt

Directions

Step 1

In a medium saucepan, pour 2 cups of whole milk.

Step 2

Split the vanilla bean lengthwise and scrape out the seeds, adding both the seeds and the pod to the milk.

Place the saucepan over medium heat and bring the milk mixture to a simmer. Do not let it boil.

Step 4

In a separate bowl, whisk together 3 large eggs, 0.5 cup of granulated sugar, 1 tablespoon of cornstarch, and 0.25 teaspoon of salt until smooth and well combined.

Once the milk is simmering, remove the vanilla pod, and slowly whisk hot milk into the egg mixture gradually to temper the eggs. Do this a little at a time to prevent curdling.

Pour the tempered egg mixture back into the saucepan.

Heat the mixture over medium-low heat, stirring constantly with a wooden spoon or heatproof spatula, until it thickens and coats the back of the spoon, about 5 to 7 minutes.

Remove the saucepan from the heat and strain the custard through a fine-mesh sieve into a clean bowl to remove any lumps.

Cover the surface of the custard with plastic wrap to prevent a skin from forming.

Allow the custard to cool to room temperature, then refrigerate for at least 1 hour before serving.
