  • 4 pieces large flour tortillas
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 pieces garlic cloves, minced
  • 2 tablespoons taco seasoning
  • 1.5 cups cooked white rice
  • 1 cup canned black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 0.5 cup salsa
  • 0.5 cup sour cream
  • 0.25 cup fresh cilantro, chopped
  • 1 tablespoon oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper

Directions

Step 1

Heat a large skillet over medium heat and add the oil. Once the oil is hot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.

Add the ground beef to the skillet and cook until browned, breaking it up with a spatula. This will take about 5-7 minutes.

Once the beef is cooked, drain any excess fat from the skillet. Stir in the taco seasoning along with salt and pepper. Mix well to coat the beef, then remove from heat.
