Ingredients

  • 6 large Egg yolks
  • 150 grams Granulated sugar
  • 450 grams Mascarpone cheese
  • 240 milliliters Heavy cream
  • 1 teaspoon Vanilla extract
  • 240 milliliters Espresso or strong coffee
  • 2 tablespoons Coffee liqueur
  • 200 grams Ladyfingers
  • 2 tablespoons Unsweetened cocoa powder
  • 25 grams Dark chocolate (optional, for garnish)

Directions

Step 1

In a medium heatproof bowl, whisk together the egg yolks and granulated sugar until well combined.

Step 2

Place the bowl over a pot of simmering water (double boiler method) and whisk continuously for about 5-7 minutes until the mixture is light and pale in color, and slightly thickened. Remove from heat and let cool slightly.

Step 3

In a separate bowl, whisk the mascarpone cheese until it’s smooth. Gently fold the mascarpone into the egg yolk mixture until well combined.

Step 4

In another bowl, whip the heavy cream with the vanilla extract until stiff peaks form.

Step 5

Gently fold the whipped cream into the mascarpone mixture until well incorporated and smooth. Be careful not to deflate the cream.

Step 6

Combine the espresso with the coffee liqueur in a shallow dish.

Step 7

Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them (they should remain somewhat firm).

Step 8

Arrange a layer of dipped ladyfingers at the bottom of a 9x9 inch (23x23 cm) dish.

Step 9

Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing the top with a spatula.

Step 10

Repeat with another layer of coffee-dipped ladyfingers and the remaining mascarpone mixture.

Step 11

Cover the tiramisu and refrigerate for at least 6 hours, or overnight for the best flavor.

Step 12

Before serving, dust the top with unsweetened cocoa powder.

Step 13

Optionally, use a vegetable peeler to shave dark chocolate over the top for garnish.
