  • 1 tablespoon sugar
  • 200 grams bamboo shoots, drained and sliced
  • 1 medium red bell pepper, sliced
  • 1 medium zucchini, sliced
  • 15 grams basil leaves
  • 2 lime leaves, torn
  • 1 lime, juiced
  • 600 grams jasmine rice, cooked

Directions

Step 1

Heat the vegetable oil in a large saucepan over medium heat.

Step 2

Add the Thai green curry paste and stir-fry for 1-2 minutes until fragrant.

Step 3

Increase the heat to high and add the sliced chicken breast. Stir-fry for 3-4 minutes until the chicken is no longer pink.

Step 4

Pour the coconut milk and chicken stock into the saucepan, and stir to combine.

Step 5

Stir in the fish sauce and sugar. Bring the mixture to a gentle simmer.
