Ingredients

  • 4 6-ounce pieces beef tenderloin steaks
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 large portabella mushrooms (sliced)
  • 2 garlic cloves (minced)
  • 1 tablespoon balsamic vinegar
  • 1 cup low-sodium beef broth
  • 1 tablespoon heavy cream
  • 1 teaspoon fresh thyme leaves

Directions

Step 1

Season the beef tenderloin steaks evenly with salt and black pepper on both sides. Set them aside to rest at room temperature for 10 minutes.

Step 2

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat until hot and shimmering.

Step 3

Add the tenderloin steaks to the skillet and sear for 3-4 minutes on each side for medium-rare, or adjust to your preferred doneness. Transfer the steaks to a plate and cover with foil to keep warm.

Step 4

In the same skillet, add the remaining tablespoon of olive oil and butter. Lower the heat to medium and add the sliced portabella mushrooms. Sauté for 5-6 minutes, stirring occasionally, until the mushrooms release their moisture and are golden brown.

Step 5

Add the minced garlic to the mushrooms and cook for 1 minute until fragrant.

Step 6

Deglaze the skillet by adding the balsamic vinegar, stirring to scrape up any browned bits from the bottom of the pan.

Step 7

Pour in the beef broth and simmer the mixture for 5-6 minutes, allowing it to reduce by about half.

Step 8

Stir in the heavy cream and fresh thyme leaves. Simmer for another 2 minutes until the sauce thickens slightly.

Step 9

Return the tenderloin steaks to the skillet and spoon the sauce over the top. Cook for 1-2 minutes just to warm the steaks through.

Step 10

Serve the tenderloin steaks hot, topped with the balsamic portabella sauce. Pair with roasted vegetables or mashed potatoes for a complete meal.
