Ingredients

  • 0.5 cup bulgur wheat (fine or medium)
  • 0.5 cup boiling water
  • 2 cups fresh parsley (finely chopped, packed)
  • 0.25 cup fresh mint (finely chopped)
  • 2 ripe tomatoes (diced)
  • 0.5 English cucumber (diced)
  • 3 green onions (finely sliced)
  • 0.25 cup extra virgin olive oil
  • 0.25 cup fresh lemon juice
  • 1 clove garlic (minced)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper (freshly ground)

Directions

Step 1

Place the bulgur wheat in a large bowl. Pour the boiling water over it, cover the bowl with a plate or plastic wrap, and let it sit for 10-15 minutes until the bulgur is tender and all the water is absorbed. Fluff the bulgur with a fork and set aside to cool.

Step 2

Meanwhile, finely chop the parsley and mint, and dice the tomatoes and cucumber. Slice the green onions finely. Set all the vegetables and herbs aside.

Step 3

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to make the dressing.
