Ingredients

  • 120 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 4 large eggs
  • 150 grams granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 240 milliliters heavy cream
  • 30 grams powdered sugar
  • 0.5 teaspoon vanilla extract
  • 0 additional powdered sugar for dusting

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 23x33 cm (9x13 inch) rimmed baking sheet and line it with parchment paper, then lightly grease the parchment paper as well.

Step 2

In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the eggs and granulated sugar with an electric mixer on high speed for about 4-5 minutes, or until the mixture is thick and pale. The batter should fall in ribbons when the beaters are lifted.

Step 4

Add in the vanilla extract and melted butter, mixing gently until combined.

Step 5

Gradually fold in the dry ingredients into the egg mixture with a spatula, being careful not to deflate the batter.

Step 6

Pour the batter into the prepared baking sheet and spread it evenly with a spatula.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the cake springs back when lightly touched and the edges are lightly browned.

Step 8

While the cake is baking, lay out a clean kitchen towel on the counter and dust generously with powdered sugar.

Step 9

Once the cake is done, immediately invert it onto the prepared kitchen towel. Peel off the parchment paper carefully.

Step 10

Starting from one of the short ends, gently roll up the cake with the towel inside. Allow it to cool completely in this rolled-up state.

Step 11

Prepare the filling by whipping the heavy cream, powdered sugar, and vanilla extract together in a bowl until stiff peaks form.

Step 12

Carefully unroll the cooled cake and spread the whipped cream filling evenly over the surface, leaving a small border at the edges.

Step 13

Gently re-roll the cake without the towel, ensuring it is firm but not too tight to prevent the filling from spilling out.

Step 14

Dust the top of the Swiss Roll with additional powdered sugar before serving.

Step 15

Slice into pieces and serve. Enjoy your Classic Swiss Roll!
