Ingredients

  • 1 cup Sushi rice
  • 1.25 cup Water
  • 3 tablespoons Rice vinegar
  • 1 tablespoon Sugar
  • 0.5 teaspoon Salt
  • 5 sheets Nori (seaweed) sheets
  • 0.5 pound Fresh sushi-grade fish (such as tuna or salmon)
  • 1 medium Cucumber
  • 1 large Avocado
  • 0 Soy sauce
  • 0 Wasabi

Directions

Step 1

Rinse the sushi rice several times under cold water until the water runs clear. Drain well.

Step 2

In a medium saucepan, combine the rice and 1.25 cups of water. Cover and bring to a boil over high heat.

Step 3

Reduce the heat to low and simmer for 15 minutes, then remove the saucepan from heat and let it sit, covered, for an additional 10 minutes.

In a small bowl, mix the rice vinegar, sugar, and salt until the sugar dissolves.

Transfer the cooked rice to a large bowl, and gently fold the vinegar mixture into the rice with a wooden spatula or paddle. Let it cool to room temperature.

While the rice cools, slice the fish into thin strips about 1/2-inch wide. Peel the cucumber, remove the seeds, and cut into thin strips. Halve the avocado, remove the pit, and slice it into thin pieces.

Lay a sheet of nori on a flat surface, shiny side down. If the nori sheets are large, you can tear them in half.

Wet your fingers with water to prevent sticking and spread a small amount of sushi rice on one end of the nori sheet, approximately a tablespoon, and press it into a thin layer.

Place a few strips of fish, cucumber, and avocado on top of the rice.

Roll the nori tightly around the fillings, shaping it into a cone form as you roll away from you.

Seal the end of the nori with a little water to help it stick together.

Step 12

Repeat steps 7-11 with the remaining ingredients.

Step 13

Serve the hand rolls immediately with soy sauce and wasabi on the side for dipping.
