Ingredients

  • 4 whole large bell peppers
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 garlic cloves
  • 1 pound ground beef
  • 1 cup cooked rice
  • 15 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheese
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Rub the outer sides with 1 tablespoon of olive oil and place them open-side up in a baking dish.

Step 3

Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Dice the onion and mince the garlic.

Step 4

Add the onion to the skillet and sauté until it becomes translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.

Step 5

Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.

Stir in the cooked rice, diced tomatoes (with juices), tomato paste, oregano, basil, salt, and black pepper. Simmer for 5-7 minutes to blend flavors and reduce slightly.
