  • 3 pounds chicken (bone-in, skin-on, cut into pieces)

  • 2 medium carrots (sliced)
  • 2 stalks celery stalks (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • 4 medium potatoes (quartered)
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Season the chicken pieces with salt, black pepper, and paprika.

Heat olive oil in a large pot over medium-high heat. Brown the chicken pieces on all sides, working in batches if necessary, and then remove them from the pot.

In the same pot, add the chopped onion, sliced carrots, and celery. Saute for about 5 minutes until the vegetables begin to soften.
