Ingredients

  • 300 grams beef tenderloin
  • 1 medium shallot
  • 2 tablespoons capers
  • 3 small cornichons
  • 2 tablespoons parsley
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 large egg yolk
  • 2 tablespoons extra-virgin olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 dashes Tabasco sauce
  • 1 small baguette

Directions

Step 1

Place the beef tenderloin in the freezer for about 10-15 minutes to slightly firm up, making it easier to dice.

Step 2

Finely chop the shallot, capers, cornichons, and parsley and set aside.

Step 3

Remove the beef from the freezer and cut into small dice, approximately 1/4 inch cubes.

Step 4

In a large mixing bowl, combine the diced beef with the shallot, capers, cornichons, parsley, Dijon mustard, Worcestershire sauce, and egg yolk. Mix well to combine.

Step 5

Gradually add the olive oil while mixing to incorporate it thoroughly.

Step 6

Season the mixture with salt, black pepper, and Tabasco sauce. Adjust the seasoning to taste.

Step 7

Slice the small baguette into thin slices and toast them lightly under a grill or in a toaster.

Step 8

Divide the steak tartare between two plates, forming a neat mound or using a mold for a precise shape.

Step 9

Garnish with additional capers or parsley if desired.

Step 10

Serve immediately with the toasted baguette slices on the side.
