Ingredients

  • 8 cups Baby spinach
  • 6 slices Bacon
  • 2 pieces Large eggs
  • 0.5 medium Red onion
  • 1 cup Cherry tomatoes
  • 0.25 cup Sliced almonds (optional)
  • 0.25 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the baby spinach thoroughly under cold water. Pat dry with a clean towel or use a salad spinner to remove excess water. Set aside in a large salad bowl.

Step 2

Cook the bacon slices in a skillet over medium heat until crispy. Transfer them to a paper towel-lined plate to drain. Once cooled, crumble the bacon into small pieces and set aside.

Step 3

Place the eggs in a small pot and cover with cold water. Bring to a boil, then reduce the heat to a simmer and cook for 9 minutes. Transfer the eggs to an ice water bath to cool, then peel and slice into rounds.
