Ingredients

  • 4 slices sourdough bread
  • 4 slices sliced turkey breast
  • 2 slices cheddar cheese
  • 1 avocado
  • 1 tomato
  • 1 cup baby spinach
  • 2 tablespoons mayonnaise
  • 2 tablespoons butter
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by slicing the avocado in half, removing the pit, and scooping the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper.

Step 2

Slice the tomato into thin slices and set aside.

Step 3

Lay the slices of sourdough bread on a clean surface. Spread 1 tablespoon of mayonnaise on two of the slices.

Step 4

On the mayonnaise-topped slices, layer 2 slices of turkey breast and 1 slice of cheddar cheese each.

Step 5

Spread the mashed avocado evenly on the remaining two slices of bread.

Step 6

Top the avocado with slices of tomato and spread out the baby spinach evenly.

Step 7

Press the sandwich halves together, combining the turkey and cheese side with the avocado and spinach side.

Step 8

Heat a large pan over medium heat. While the pan heats, spread a thin layer of butter on the outer sides of each sandwich.

Step 9

Place the sandwiches in the pan and grill for about 2-3 minutes on each side, or until the bread is golden brown and the cheese has melted.

Step 10

Remove from the pan, slice each sandwich in half, and serve immediately.
