  • 1 lb Ground beef (80/20 blend)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 4 slices American cheese
  • 2 tbsp Butter
  • 4 Soft burger buns
  • 8 slices Sliced pickles
  • 4 tbsp Mayonnaise
  • 2 tbsp Vegetable oil

Directions

Step 1

Divide the ground beef into 8 equal balls, approximately 2 ounces each. Do not compress the meat, keeping it loose will help form a better crust.

Step 2

Heat a griddle or large cast-iron skillet over medium-high heat until it is very hot.

Step 3

Add vegetable oil to the pan and spread it evenly. Allow it to heat until it is shimmering.

Step 4

Place 4 balls of beef onto the hot griddle. Leave enough space between each ball.

Step 5

Use a stiff spatula or heavy skillet to smash each ball of beef down into a very thin patty. Press hard for about 10 seconds to ensure the patty is flat.

Season each patty generously with salt and black pepper.
