Ingredients

  • 2 cups All-purpose flour
  • 0.25 cups Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter (cold, cubed)
  • 0.75 cups Heavy cream (plus extra for brushing)
  • 1 large Egg
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingertips to blend the butter into the flour until the mixture resembles coarse crumbs.

Step 4

In a small bowl, whisk together the heavy cream, egg, and vanilla extract.

Step 5

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overwork the dough.

Step 6

Turn the dough out onto a lightly floured surface. Pat it into a 1-inch-thick rectangle. Use a round biscuit cutter (about 2.5 inches in diameter) to cut out shortcakes. Re-roll scraps as needed.

Step 7

Place the shortcakes on the prepared baking sheet, spaced about 2 inches apart. Brush the tops with a little heavy cream for a golden finish.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the shortcakes are golden brown.

Step 9

Allow them to cool slightly on a wire rack before serving. Slice in half and fill with fresh fruit, such as strawberries, and whipped cream. Enjoy!
