Ingredients

  • 2 pounds potatoes
  • 0.5 cup butter
  • 0.5 cup whole milk
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1.5 pounds ground lamb
  • 1 large onion, finely chopped
  • 2 medium carrot, diced
  • 1 cup frozen peas
  • 2 cloves minced garlic
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 cup beef broth
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary leaves
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and quarter the potatoes, then place them in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.

Step 3

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add the onions and carrots, and sauté for 5 minutes until softened.

Step 4

Add the garlic to the skillet and cook for another minute until fragrant.

Step 5

Increase the heat to medium-high and add the ground lamb to the skillet. Cook until browned, breaking up any large pieces with a wooden spoon, about 8-10 minutes.

Step 6

Stir in the tomato paste, Worcestershire sauce, beef broth, thyme, rosemary, and frozen peas. Simmer for 5 minutes until the mixture thickens slightly. Season with half of the salt and pepper.

Step 7

Once the potatoes are tender, drain them and return to the pot. Add butter, milk, the remaining salt and pepper, and mash until smooth and creamy.

Step 8

Spread the lamb mixture evenly in a baking dish. Spread the mashed potatoes on top, smoothing with a spatula. For a decorative touch, use a fork to create lines in the mashed potatoes.

Step 9

Place the dish in the preheated oven and bake for 25 minutes, until the top is golden brown and the filling is bubbling.

Step 10

Allow to cool for a few minutes before serving. Enjoy your classic Shepherd's Pie!
