Ingredients

  • 4 Italian sausages
  • 2 tablespoons olive oil
  • 1 large onions
  • 2 bell peppers
  • 2 garlic cloves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 hoagie rolls
  • 0.25 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 cup shredded lettuce
  • 4 slices sliced provolone cheese

Directions

Step 1

Slice the onion and bell peppers into thin strips. Mince the garlic cloves.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausages and cook for 5-7 minutes until browned on all sides. Remove sausages from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and bell peppers. Cook for 5 minutes until the vegetables start to soften.

Step 4

Add the minced garlic, salt, and black pepper to the skillet. Continue to cook for an additional 3-4 minutes until the vegetables are soft and slightly caramelized.

Step 5

Slice the cooked sausages lengthwise. Return them to the skillet and mix with the vegetables. Heat through for another 2-3 minutes.

Step 6

In a small bowl, mix together mayonnaise and Dijon mustard. Set aside.

Step 7

Slice open the hoagie rolls and lightly toast them under a broiler for 1-2 minutes until golden, watching carefully to avoid burning.

Step 8

Spread the mayonnaise-mustard mixture evenly on both sides of each toasted hoagie roll.

Step 9

Place a layer of shredded lettuce at the bottom of each roll, top with the sausage and vegetable mixture, and finally add a slice of provolone cheese on top.

Step 10

Close the sandwiches and serve immediately, allowing the cheese to melt slightly from the warmth of the sausages.
