  • 450 grams dark chocolate
  • 100 grams butter
  • 100 grams golden syrup
  • 200 grams digestive biscuits
  • 100 grams mini marshmallows
  • 100 grams unsalted roasted peanuts
  • 50 grams dried cranberries

Directions

Step 1

Line a 9x9 inch baking tin with parchment paper, leaving an overhang for easy removal of the rocky road.

Step 2

Break the dark chocolate into small pieces and place them in a large heatproof bowl.

Step 3

Add the butter and golden syrup to the chocolate, and set the bowl over a pan of gently simmering water. Ensure the bowl does not touch the water.

Step 4

Stir the mixture occasionally until everything is completely melted and smooth. Remove it from the heat.

Place the digestive biscuits in a ziplock bag and crush them with a rolling pin, leaving some larger chunks for texture.
