  • 5 pounds beef brisket
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt

  • 1 teaspoon onion powder

  • 2 large yellow onions
  • 4 medium carrots
  • 3 medium celery stalks
  • 5 whole garlic cloves
  • 2 cups beef broth
  • 1 cup red wine
  • 5 sprigs fresh thyme
  • 2 whole bay leaves

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

Pat the brisket dry with paper towels. Rub the brisket all over with olive oil.

Step 3

Combine kosher salt, freshly ground black pepper, garlic powder, onion powder, and smoked paprika in a small bowl. Rub this seasoning mix evenly over the entire brisket.
