Ingredients

  • 1 cup Short-grain white rice
  • 2 cups Water
  • 4 cups Whole milk
  • 0.5 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 1 tablespoon Butter (optional for richness)
  • 0.33 cup Raisins (optional)

Directions

Step 1

In a medium saucepan, combine the rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 10 minutes or until the water is fully absorbed.

Step 2

Once the water is absorbed, add the milk, sugar, and a pinch of salt to the saucepan with the cooked rice. Stir well to combine.

Step 3

Increase the heat to medium and bring the mixture to a gentle simmer, stirring frequently to prevent sticking.

Step 4

Lower the heat to low and continue to cook the rice pudding uncovered, stirring occasionally, for about 30-35 minutes or until the mixture thickens and the rice becomes very tender and creamy.

Step 5

Remove the saucepan from the heat and stir in the vanilla extract, ground cinnamon, and butter (if using). If you are adding raisins, stir them in now.

Step 6

Taste and adjust the sweetness or cinnamon to your preference, if needed.

Step 7

Allow the rice pudding to cool slightly before serving. Serve warm or chilled, garnished with an additional sprinkle of cinnamon, if desired.
