  • 200 grams plain flour
  • 100 grams cold unsalted butter
  • 2 tablespoons cold water
  • 4 large eggs
  • 200 milliliters heavy cream
  • 100 milliliters whole milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.125 teaspoons nutmeg
  • 150 grams grated Gruyère cheese
  • 100 grams cooked bacon, chopped
  • 100 grams chopped spinach

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

To make the pastry crust, add the flour and cold butter into a food processor and pulse until the mixture resembles coarse breadcrumbs.

Step 3

Gradually add 2 tablespoons of cold water while pulsing until the dough starts to come together. If necessary, add a little more water, one teaspoon at a time.

Turn the dough onto a lightly floured surface, gather into a ball, flatten into a disk, wrap in plastic wrap, and refrigerate for at least 15 minutes.
