Ingredients

  • 4 medium-sized Potatoes
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 medium-sized, finely chopped Onion
  • 1 teaspoon Ginger-garlic paste
  • 2 finely chopped Green chilies
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon (adjust to taste) Salt
  • 2 tablespoons, chopped Fresh coriander leaves
  • 0.5 cup Water

Directions

Step 1

Peel and cube the potatoes into 1-inch pieces and set aside in a bowl of water to prevent browning.

Heat the vegetable oil in a large pan over medium heat.

Step 3

Add the mustard seeds and cumin seeds to the hot oil. Let them splutter for a few seconds.

Step 4

Add the finely chopped onion and sauté until translucent and golden brown.

Step 5

Stir in the ginger-garlic paste and chopped green chilies. Sauté for another minute until fragrant.

Drain the water from the potatoes and add them to the pan. Stir well to coat the potatoes with the spiced mixture.
