Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 tablespoon Salt
  • 2 tablespoons Lemon juice
  • 1 cup Mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 Celery stalks, finely chopped
  • 0.5 cup Red onion, finely chopped
  • 2 tablespoons Fresh dill, chopped
  • 0.5 teaspoon Freshly ground black pepper
  • 3 Hard-boiled eggs, chopped
  • 0.5 teaspoon Paprika

Directions

Step 1

Scrub and peel the potatoes, then cut them into bite-sized cubes.

Step 2

Place the potato cubes in a large pot and cover them with cold water. Add 1 tablespoon of salt.

Step 3

Bring the water to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for 15-20 minutes until fork-tender.

Step 4

While the potatoes are cooking, prepare a large bowl with ice water. Once the potatoes are cooked, drain them and immediately transfer them to the ice water to cool promptly.

Step 5

In a separate bowl, whisk together 2 tablespoons of lemon juice, 1 cup of mayonnaise, and 2 tablespoons of Dijon mustard until smooth.
