Ingredients

  • 4 medium Russet potatoes
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 1 medium Yellow onion
  • 1 medium Bell pepper
  • 2 cloves Garlic cloves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Ground cumin
  • 4 slices Cooked bacon (optional)
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Peel the potatoes and dice them into 1/2 inch cubes. Place them in a bowl of cold water to prevent browning and to remove excess starch.

Heat olive oil and butter in a large skillet over medium heat.

Dice the onion and bell pepper. Mince the garlic cloves.

Step 4

Drain the potatoes and pat them dry with a clean kitchen towel.
