Ingredients

  • 500 grams Russet potatoes
  • 30 grams Unsalted butter
  • 60 milliliters Whole milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 150 grams Cooked ham, finely diced
  • 2 tablespoons Chives, finely chopped
  • 50 grams All-purpose flour
  • 2 Eggs, beaten
  • 100 grams Breadcrumbs
  • 500 milliliters Vegetable oil, for frying

Directions

Step 1

Peel and cube the potatoes, then place them in a pot of salted water. Bring to a boil and cook until tender, about 12-15 minutes.

Step 2

Drain the potatoes and return them to the pot. Add butter, milk, salt, pepper, and nutmeg. Mash until smooth and creamy.

Fold in the diced ham and chopped chives. Allow the mixture to cool slightly, then refrigerate for 20 minutes to firm up.

Shape the chilled potato mixture into golf ball-sized portions and flatten slightly into oval shapes.
