Ingredients

  • 250 grams Sushi-grade tuna
  • 60 ml Soy sauce
  • 15 ml Sesame oil
  • 2 stalks Green onions, sliced
  • 10 grams Sesame seeds
  • 300 grams Cooked sushi rice
  • 100 grams Cucumber, sliced
  • 100 grams Edamame beans, shelled
  • 1 whole Avocado, diced
  • 1 medium Carrot, julienned
  • 30 ml Rice vinegar
  • 10 grams Sugar
  • 30 grams Pickled ginger

Directions

Step 1

Begin by marinating the tuna. In a medium bowl, combine 60ml of soy sauce and 15ml of sesame oil.

Step 2

Cut the sushi-grade tuna into 1cm cubes and add it to the marinade.

Step 3

Add sliced green onions and sesame seeds to the tuna marinade mixture. Stir well to coat the tuna evenly. Set aside for at least 10 minutes to marinate.

Step 4

While the tuna is marinating, prepare the sushi rice. In a small saucepan over medium heat, combine 30ml of rice vinegar and 10 grams of sugar. Stir until the sugar dissolves. Remove from heat.

Step 5

Place the cooked sushi rice in a large bowl and pour the vinegar mixture over the rice. Gently fold until the rice is evenly coated.

Step 6

Prepare the vegetables. Slice the cucumber, shell the edamame, dice the avocado, and julienne the carrot.

To assemble the poke bowl, divide the sushi rice between two serving bowls as the base.
