Ingredients

  • 1 pound ribeye steak, thinly sliced
  • 2 tablespoons olive oil
  • 1 large yellow onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced (optional)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 8 slices sliced provolone cheese
  • 4 hoagie rolls
  • 2 tablespoons butter

Directions

Step 1

Place the ribeye steak in the freezer for about 30 minutes to firm it up (this makes it easier to thinly slice). Then, using a sharp knife, slice the steak as thinly as possible against the grain.

Step 2

In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced onions (and bell peppers, if using). Sauté until the onions are soft and translucent, about 5-7 minutes. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Increase the heat to medium-high and add the thinly sliced ribeye steak to the skillet in a single layer.

Step 4

Season the steak with salt and black pepper. Cook until the steak begins to brown, about 2-3 minutes.

Step 5

Add the Worcestershire sauce to the skillet and mix well with the steak. Cook for an additional 2 minutes.

Step 6

Return the cooked onions (and bell peppers, if using) to the skillet and combine with the steak.

Step 7

Divide the steak mixture into four parts within the skillet. Place two slices of provolone cheese over each portion and let it melt. Once melted, turn off the heat.

Step 8

Butter and toast the inside of the hoagie rolls either on a skillet or under a broiler until they are lightly golden brown.

Step 9

To assemble, use a spatula to transfer each cheese-covered steak portion to a hoagie roll.

Step 10

Serve immediately while warm and enjoy your delicious cheesesteak!
