Ingredients

  • 4 large Egg whites
  • 200 g Granulated sugar
  • 2 teaspoons Cornstarch
  • 1 teaspoon White vinegar
  • 1 teaspoon Vanilla extract
  • 300 ml Heavy cream
  • 200 g Fresh fruits
  • 2 tablespoons Powdered sugar

Directions

Step 1

Preheat your oven to 130°C (265°F) and line a baking sheet with parchment paper. Draw a 20 cm circle on the parchment paper and flip it over so the pencil side is down.

Step 2

In a large, clean mixing bowl, whisk the egg whites using an electric mixer on medium speed until soft peaks form.

Step 3

Gradually add the granulated sugar, one tablespoon at a time, beating on a high speed until the mixture is shiny and holds stiff peaks. This should take about 10 minutes.

Step 4

Sift in the cornstarch, and add the white vinegar and vanilla extract. Gently fold them into the meringue with a spatula until well combined.

Step 5

Spoon the meringue onto the prepared baking sheet, using the drawn circle as a guide. Shape it into a nest with higher edges for holding toppings.

Step 6

Place the meringue in the oven and immediately reduce the temperature to 110°C (230°F). Bake for 90 minutes, then turn off the oven. Leave the meringue to cool completely in the oven with the door slightly open, for about 3 hours or overnight.

Step 7

Once cooled, whip the heavy cream with the powdered sugar until soft peaks form.

Step 8

Top the cooled pavlova with the whipped cream and arrange your choice of fresh fruits on top. Serve immediately and enjoy the delicious contrast of textures.
