Ingredients

  • 1 pound ground beef
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 4 tablespoons unsalted butter
  • 2 large yellow onions, thinly sliced
  • 8 slices rye bread
  • 8 slices Swiss cheese
  • 0.5 cup Thousand Island dressing

Directions

Step 1

In a large skillet over medium heat, melt 2 tablespoons of butter. Add the thinly sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 20-25 minutes. Remove the onions from the skillet and set aside.

Step 2

While the onions are cooking, season the ground beef with the salt and pepper. Divide the beef into four equal parts and form each into a patty slightly larger than your bread slices.

Step 3

In the same skillet, increase the heat to medium-high and add the patties. Cook for about 3-4 minutes on each side, until nicely browned and cooked to your desired level of doneness.

Step 4

Remove the patties from the skillet. Clean the skillet if necessary and reduce the heat back to medium.

Step 5

Butter one side of each slice of rye bread using the remaining 2 tablespoons of butter.

Step 6

To assemble each patty melt, place a slice of Swiss cheese on the unbuttered side of a piece of bread, top it with a cooked beef patty, a generous scoop of caramelized onions, a tablespoon of Thousand Island dressing, another slice of Swiss cheese, and finally another piece of bread with the buttered side facing out.

Step 7

Place the sandwiches back into the skillet. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

Step 8

Remove the sandwiches from the skillet, cut them in half if desired, and serve hot.
