Ingredients

  • 24 pieces fresh oysters in their liquid
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 1 celery stalk, finely chopped
  • 2 cups whole milk
  • 2 cups heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 teaspoon cayenne pepper
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Begin by straining the oysters, reserving their liquid. Set both the oysters and the liquid aside separately.

Step 2

In a large saucepan, melt the butter over medium heat.

Step 3

Add the chopped onion and celery to the saucepan and sauté until they are soft and translucent, about 5 minutes.

Step 4

Pour in the reserved oyster liquid and bring it to a simmer.

Step 5

Lower the heat to medium-low and stir in the whole milk and heavy cream.

Step 6

Add the salt, black pepper, and cayenne pepper, adjusting to taste if necessary.

Step 7

Continue to cook the mixture, stirring occasionally, just until it starts to steam but does not boil. This will take about 10 minutes.

Step 8

Add the oysters to the mixture, cooking gently until the edges of the oysters just begin to curl, approximately 3 to 5 minutes.

Step 9

Remove the saucepan from the heat and let the stew sit for a few minutes to allow the flavors to meld completely.

Step 10

Ladle the stew into bowls and garnish with chopped fresh parsley before serving.
