Ingredients

  • 1 cup Tapioca pearls
  • 8 cups Water
  • 1 cup Brown sugar
  • 2 tablespoons Black tea leaves
  • 2 cups Hot water
  • 1 cup Milk
  • 1 cup Ice cubes
  • 2 tablespoons Simple syrup (optional)

Directions

Step 1

Bring 8 cups of water to a rolling boil in a large pot over medium-high heat.

Step 2

Add the tapioca pearls to the boiling water. Once they start to float, reduce the heat to medium and boil for 30 minutes, stirring occasionally to prevent sticking.

Step 3

After 30 minutes, turn off the heat and cover the pot. Let the pearls sit for an additional 15 minutes.

Step 4

While the pearls are resting, brew the tea. In a teapot or heatproof container, steep 2 tablespoons of black tea leaves in 2 cups of hot water for 5 minutes. Strain the tea leaves and set aside the brewed tea.

After 15 minutes, drain the tapioca pearls and rinse them under cold water. Transfer them to a bowl.

Step 6

Stir the brown sugar into the warm pearls until fully dissolved. Allow the pearls to soak in the brown sugar mixture for at least 10 minutes, stirring occasionally.

In a large mixing bowl or pitcher, combine the brewed tea and 1 cup of milk. Stir well to mix thoroughly.

To assemble the bubble tea, divide the boba pearls and their syrup between two glasses.

Fill each glass halfway with ice cubes.
