Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup ketchup
  • 1 cup fresh lime juice (from about 3 limes)
  • 1 cup clamato or tomato juice
  • 1 tbsp hot sauce (such as Tabasco)
  • 1 tbsp Worcestershire sauce
  • 0.5 cup red onion, finely diced
  • 2 large roma tomatoes, finely diced
  • 1 medium English cucumber, finely diced
  • 1 small jalapeño, finely minced (optional)
  • 0.25 cup cilantro, chopped
  • 1 large avocado, diced
  • 1 tsp salt
  • 0.5 tsp pepper
  • 0 tortilla chips or saltine crackers, for serving

Directions

Step 1

Bring a medium pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until the shrimp turn pink and are opaque. Quickly transfer the shrimp to an ice bath to stop the cooking process. Drain and chop shrimp into bite-sized pieces, leaving a few whole for garnish if desired.

Step 2

In a large mixing bowl, whisk together ketchup, lime juice, clamato or tomato juice, hot sauce, Worcestershire sauce, salt, and pepper until fully combined.

Step 3

Add the cooked shrimp to the bowl along with the red onion, diced tomatoes, cucumber, jalapeño (if using), and cilantro. Stir everything together to ensure the shrimp and vegetables are coated in the sauce.

Step 4

Gently fold the diced avocado into the mixture, being careful not to mash it.

Step 5

Taste and adjust seasoning with additional salt, pepper, or lime juice as needed.

Step 6

Cover and refrigerate the shrimp cocktail for at least 15-30 minutes to chill and allow the flavors to meld.

Step 7

Serve in individual cocktail glasses or small bowls, garnished with a whole shrimp and additional cilantro. Pair with tortilla chips or saltine crackers for dipping.
