  • 225 grams unsalted butter, softened
  • 225 grams caster sugar
  • 4 pieces large eggs
  • 225 grams self-raising flour
  • 100 grams plain flour
  • 60 milliliters milk
  • 1 lemon lemon zest
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 170°C (150°C fan) or 340°F.

Step 2

Grease and line a 20cm (8-inch) round cake tin with parchment paper.

Step 3

In a large mixing bowl, cream together the softened butter and caster sugar until the mixture is light and fluffy. This should take about 3 to 4 minutes.

Add the eggs to the mixture one at a time, beating well after each addition to ensure they are fully incorporated.
