Ingredients

  • 340 grams Elbow macaroni
  • 4 tablespoons Unsalted butter
  • 4 tablespoons All-purpose flour
  • 3 cups Whole milk
  • 1 cup Heavy cream
  • 3 cups Sharp cheddar cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Paprika (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 2

In a large saucepan, melt the butter over medium heat. Stir in the flour and cook, whisking constantly, for about 1-2 minutes, or until the mixture begins to bubble but does not brown.

Step 3

Gradually add the milk and heavy cream, whisking constantly to prevent lumps. Continue cooking over medium heat until the mixture thickens and begins to simmer, about 5-7 minutes.

Step 4

Reduce the heat to low. Stir in the shredded cheddar cheese and Gruyère cheese, adding one small handful at a time and whisking well after each addition until fully melted and smooth.

Step 5

Add the Dijon mustard, salt, and black pepper to the cheese sauce. Taste and adjust seasoning as needed.

Step 6

Add the cooked elbow macaroni to the cheese sauce, stirring gently to fully coat the pasta.

Step 7

Transfer the mac and cheese to a serving dish, or for a baked version, pour it into a buttered baking dish and broil for 3-5 minutes until lightly browned on top.

Step 8

Sprinkle with paprika, if using, for garnish before serving.
