Ingredients

  • 4 medium Russet potatoes
  • 1 large Yellow onion
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel the potatoes and slice them into 1/4-inch thick rounds.

Step 2

Place the potato slices into a large pot, cover with cold water, and bring to a boil. Cook for 5-7 minutes or until the potatoes are just fork-tender but not falling apart. Drain and let cool slightly.

Step 3

While the potatoes are cooling, thinly slice the onion.

Step 4

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 10-12 minutes or until they are soft and golden brown. Remove the onions from the pan and set aside.
