Ingredients

  • 3 large leeks
  • 2 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cup heavy cream
  • 3 large egg yolks
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.125 teaspoon nutmeg
  • 1 9-inch pie crust

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Clean the leeks thoroughly, slicing them lengthwise to remove all the grit. Thinly slice the white and light green parts.

Step 3

In a large skillet over medium heat, melt the butter. Add the sliced leeks and cook for about 10 minutes, stirring often, until they are soft but not brown.

Step 4

In a medium saucepan over medium heat, stir together the flour and remaining melted butter to make a roux. Cook for 1-2 minutes without letting it brown.

Step 5

Slowly whisk in the milk and continue to stir until the sauce thickens. Add the heavy cream and mix well.

Step 6

Remove the saucepan from heat and stir in the egg yolks, Parmesan cheese, salt, black pepper, and nutmeg until smooth.

Step 7

Add the cooked leeks to the sauce, stirring until fully incorporated.

Step 8

Roll out the pie crust into a pie dish. Pour the leek mixture into the prepared crust.

Step 9

Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.

Step 10

Allow the leek pie to cool for at least 10 minutes before slicing and serving.
