Ingredients

  • 500 grams Vanilla ice cream
  • 500 grams Chocolate ice cream
  • 12 pieces Maraschino cherries
  • 300 grams Dark chocolate chips
  • 50 grams Cocoa powder
  • 100 grams Chopped nuts (optional)
  • 30 grams Unsalted butter
  • 50 grams Confectioner's sugar

Directions

Step 1

Start by lining a baking tray with parchment paper and set aside. Ensure your ice cream is soft but not melted.

Step 2

Using an ice cream scoop, scoop a ball of chocolate ice cream, roughly the size of a golf ball. Flatten it slightly in your hand.

Step 3

Place a maraschino cherry in the center of the flattened ice cream and mold the chocolate ice cream around it to form a ball. Place on the prepared tray and freeze for 30 minutes.

Step 4

Repeat the process with the vanilla ice cream. Scoop a ball of vanilla ice cream and make a dent in the center with your thumb.

Step 5

Insert the chocolate ice cream ball into the center of the vanilla ice cream and shape it into a larger ball, fully enclosing the chocolate ball. Return to the freezer for 1-2 hours until solid.

While ice cream balls are freezing, melt the dark chocolate chips with the butter in a double boiler until smooth and glossy. Let it cool slightly.

Once the ice cream is solid, dip each ball into the melted chocolate using a fork or spoon to completely cover them.

Roll each chocolate-dipped ice cream ball in cocoa powder mixed with confectioner's sugar and, if desired, roll in chopped nuts as well.

Place each finished tartufo back onto the tray and freeze for another 2 hours or until the chocolate shell is completely hard.

Serve the tartufo by cutting it into halves or quarters to reveal the stunning layers inside. Enjoy immediately.
