Ingredients

  • 0.5 cup Basmati rice
  • 4 cups Whole milk
  • 0.5 cup Sugar
  • 4 whole Green cardamom pods
  • 0.125 teaspoon Saffron strands
  • 2 tablespoons Blanched almonds
  • 2 tablespoons Cashew nuts
  • 2 tablespoons Raisins
  • 1 tablespoon Pistachios
  • 1 teaspoon Rose water
  • 1 cup Water

Directions

Step 1

Rinse the basmati rice in cold water until the water runs clear. Soak the rice in 1 cup of water for 20 minutes, then drain.

Step 2

In a heavy-bottomed pot, bring the milk to a boil over medium heat, stirring occasionally to prevent it from sticking to the bottom.

Step 3

Add the soaked and drained rice to the boiling milk. Reduce the heat to low and cook, stirring frequently, for about 30 to 40 minutes or until the rice is cooked and the mixture thickens.

Step 4

Crush the cardamom pods slightly to release the seeds and add them to the pot along with the saffron strands.

Step 5

Stir in the sugar, ensuring it dissolves completely. Continue to cook for another 10 minutes, stirring occasionally.

Meanwhile, in a small pan, lightly roast the almonds, cashews, and raisins until golden brown. Coarsely chop the roasted almonds and cashew nuts.

Add the roasted nuts and raisins to the kheer and mix well.

Garnish the kheer with chopped pistachios and a drizzle of rose water.
