Ingredients

  • 1 15-ounce can Canned chickpeas
  • 0.25 cup Tahini
  • 3 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 2 Garlic cloves
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Smoked paprika (optional, for garnish)
  • 1 teaspoon Salt
  • 3 tablespoons Ice water

Directions

Step 1

Drain and rinse the canned chickpeas thoroughly under cold water. For an extra creamy hummus, remove the skins from the chickpeas, though this step is optional.

Step 2

Add the tahini and lemon juice to a food processor. Blend on high for 1 minute until the mixture becomes pale and creamy.

Step 3

Add the garlic cloves, ground cumin, and salt to the processor. Blend again for about 30 seconds to combine.

Step 4

Scrape down the sides of the processor with a spatula and add half of the chickpeas. Process for 1 minute, scraping down the sides as needed.

Step 5

Add the remaining chickpeas and process for another 1-2 minutes until very smooth.

Step 6

With the processor running, slowly drizzle in olive oil followed by the ice water. Blend until the hummus reaches your desired creamy consistency. Add more water if needed.

Step 7

Taste the hummus and adjust the seasoning with additional salt, lemon juice, or cumin if desired.

Spoon the hummus into a serving bowl and drizzle with a bit more olive oil. Sprinkle with smoked paprika for a final touch, if using.
