Preheat your oven to 325°F (160°C) and prepare a 9-inch round baking dish.
In a small saucepan, combine the honey and granulated sugar over medium heat. Stir until the sugar dissolves.
Add 50 ml of water to the pan and cook without stirring, allowing the mixture to bubble until it turns a deep amber color (approximately 6-8 minutes).
Carefully pour the caramelized honey evenly into the bottom of the prepared baking dish, swirling to coat the base. Set aside to cool and harden slightly.
In a large mixing bowl, whisk together the eggs and vanilla extract.
In a separate saucepan over medium heat, combine the whole milk, heavy cream, and salt. Heat until small bubbles form around the edges but do not bring to a boil.
Slowly pour the warm milk mixture into the egg mixture, whisking constantly to avoid curdling.
Strain the custard mixture through a fine-mesh sieve to remove any lumps, then pour it gently over the hardened caramel in the baking dish.
Place the baking dish inside a larger roasting pan. Fill the pan with enough hot water to come halfway up the sides of the flan dish, creating a water bath.
Carefully transfer the roasting pan to the preheated oven. Bake for 50-60 minutes, or until the flan is set but still slightly jiggly in the center.
Remove the flan from the water bath and allow it to cool to room temperature. Then cover with plastic wrap and refrigerate for at least 4 hours or overnight.
To serve, run a knife around the edges of the flan to loosen it. Place a serving plate on top of the dish and invert it to release the flan and the caramel sauce.
Slice and enjoy the silky smooth Classic Honey Flan!
