Ingredients

  • 6 pieces large eggs
  • 3/4 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg
  • 1/2 cup rum, bourbon, or brandy (optional)
  • 1 teaspoon ground cinnamon (for garnish)

Directions

Step 1

Separate the egg yolks from the whites and place the yolks in a medium mixing bowl.

Step 2

Add the granulated sugar to the egg yolks and whisk together until the mixture is smooth and pale in color.

Step 3

In a separate saucepan, combine the whole milk, heavy cream, and vanilla extract. Heat on medium until the mixture is just steaming — do not let it boil.

Slowly add the hot milk and cream mixture to the egg yolk and sugar mixture, whisking constantly to prevent the eggs from cooking.

Pour the entire mixture back into the saucepan and heat gently over low heat, stirring constantly, until the mixture thickens slightly to coat the back of a spoon. This should take about 3-5 minutes.
