Ingredients

  • 1 3-4 lbs whole chicken
  • 16 cups water
  • 3 large carrots
  • 3 celery stalks
  • 1 large onion
  • 4 garlic cloves
  • 1 bunch fresh parsley
  • 2 bay leaves
  • 10 black peppercorns
  • 2 teaspoons salt
  • 8 oz noodles (optional)

Directions

Step 1

Place the whole chicken in a large stockpot. Add 16 cups of water to cover the chicken completely.

Step 2

Peel and roughly chop the carrots and onion. Cut the celery stalks into large pieces. Add them to the pot along with peeled and smashed garlic cloves.

Step 3

Add fresh parsley, bay leaves, black peppercorns, and salt to the pot.

Step 4

Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer uncovered for about 90 minutes, or until the chicken is cooked through and tender.

Carefully remove the chicken from the pot, and allow it to cool enough to handle. When cool, remove the meat from the bones, and shred it into bite-sized pieces. Discard the bones and skin.

Strain the broth through a fine-mesh sieve or cheesecloth into another large pot to remove vegetables and spices. Discard solids, reserving the broth.
